handle your food so people don't get sick. yeah. it's an important thing because perhaps maybe you're hosting thanksgiving for the first time. and we've got am an expert with the u.s. d s to join us here at usda. >> wendy, thank you so much for joining us. as i said, maybe people are hosting for the first time ever in may not know the ins and outs of how to do it all safely. so appreciate your time this morning. absolutely. thanks so much for having me. you bet. exa level with the first question. yeah, we're having a little debate over here. this might have some household up in arms. but i do have a question and. >> is it ok to wash your turkey with some lost their meet with soap and water. you know, some people what is the proper way to prepare your turkey. this over water at. yeah, it is a classic question. so actually usda recommends that you do not wash your turkey is not necessarily necessary to do that. and also it risks cross contamination. you can get those turkey juices in and around your sink.
8:47 am
>> and so really once you get into the oven and you cook it to a safe internal temperature of one 65 you eliminated those any pathogens and viruses may. so we in there. and so you're safe and good to go. so there is no need to wash in turkey. all right it. i've got another question, too, because yesterday i took the turkey out of the for a freezer. and i have in the is there anything i need to do special while it's thawing because a iously i want to relea cross contaminate. i want to do anything to the other food that's in the fridge. >> right. right. yes. so the thing you can do while you're flying out of the fridge is you just leave that turkey in its original packaging can put it in a food safe container. maybe let's say a glass baking dish or something to make sure chechens any juices that might and for frozen turkey. you want to give it enough time. to thaw out. and that's for every 45 pounds of turkey weight. you want to give it a full 24 hours or full day in

the kitchen so let's in the refrigerator. so let's say you have a 15 pound turkey that's going to take you about 3 days in the fridge that note days for okay. very good. very good. we're looking at some video people pulling turkey's out of the it looks yummy and then on this is another question i have here for thanksgiving day itself. we've all eaten when is it safe to start putting the food in the fridge. my mom always said you got to let it sit out until it's basically not warm anymore. and you put it in. okay. >> yeah, well, so really the key thing is you want to make sure that the food that beautiful spread you have up for your family and friends isn't out for longer than 2 hours. so the key thing. so that is once you start cleaning up and you have those leftovers. you want to get them divided up shallow containers and get those into the fridge as quickly as possible. so if you're within that 2 hour time frame and
8:49 am
you're getting those things into the bridge. you're in safe territory okay. very something miles always wants to know about. but how long can you eat those leftovers because all right. because up to mom will be eaten up for his lunch and is to look how long is too teller. yeah, that's a great question. so really leftovers, isn't that everyone's favorite part of the meal for sure. those leftovers are safe in the fridge for for up to 40. so if you eat on thanksgiving you've got till monday to either eat all those delicious leftovers or make sure that you get them into the freezer because once they're in the freezer, they can stay there for quite some time and still be safe to eat. and you take them out. okay. and then one more quick question for you. this is personally for me. >> my father-in-law loves to have stuffing in the turkey. we like still company says that's not stuffing. that's addressing i thing, which means it's in the bird. what's the safest way to do that because i'm always a little squeamish about that. yeah, that's a great question, too.

so usda technically does not recommend stopping in turkey. only because the temperature variation between the inside the cavity of the burden. the outside can be different. and so you just increasing your chances of foodborne illness. but you're going to stuff turkey, their number things you can keep in mind to stay safe. and the first one is a lot of folks like to prepare that stepping in advance and you can do that. but you want to keep the wet injury and the dry ingredients separate from each other. then right before you're about to put that bird in the oven. you want to get the stepping in their combined. those ingredients and put the stepping in there. then when you take the bird out, you want to make sure that the bird itself. >> it has reached a safe internal temperature of one 65. you also want to make sure that the stuffing has reached that safe internal temperature of one one 65 and you do that by using a food okay. very good. i thank you so much.

hopefully we'll have a lot of successful. thanks. give me years. >> with your advice. wendy, thank you so much for joining us. thanks so much. every thanksgiving. you bet. you too. did you get a lot of people healthy. now you can tell grandma watch the turkey and well that she doesn't to watch it or he was. so okay and that we don't need to be leftovers for 2 put a limit on some of the stuff, although if yes, john, he'll be in turkey sandwiches for days. if you only with miracle america. yeah. was waiting for that is a unique what but the leftovers are the best part. i agree. we are looking at some great shopping weather today. maybe some great weather to be doing some of your travels to you are likely going to have a couple days off. at least hopefully for thanksgiving in which case do enjoy all the sunshine. we're going to be seeing berkeley hills camera showing the sunshine up above. we are in the midst of some fog for the central valley and some low cloud cover for the inland east bay in the south

bay. i want to know, but we're not in the midst of any chance of rainfall. the jet stream continues to send any chance of rain and snow for that matter. well, to the north of us areas that are waterlogged like western canada, northern washington are going to continue to see heavy areas of rain resulting in flooding for them. we could use some of that down here further south. but mother nature not going to bring it to us. so at least we have the good travel conditions, maybe even at thanksgiving dinner outdoors. as you can see here today and tomorrow as well as into thursday for thanksgiving itself. all going to be sunny and dry. now today is going to be noticeably cooler than yesterday. also a little windier. so keep the jackets with you into the afternoon. oakland freeman san jose each at 65 hayward in novato at 66. well, san francisco at 64 for your daytime high today. tomorrow's temperatures a little cooler than today's and we will be looking little bump in temperatures come friday, saturday and sunday taking us back into the upper 60's to low 70's. >> all of it under sunny and

tuesday morning. >> i'm james fletcher. we've got john trouble standing by in the wings as we take a quick live look outside. you can see there's some the sun sunshine behind me. we're waking up to some pretty nice conditions albeit a little cool, john. yeah, definitely. on the cool side this morning. not quite as cold as yesterday was. we're talking some 30's across the north bay barely hanging on for a couple cities. but as james noted that sunshine pretty hard to ignore. nice way to start the morning again as long as you're prepped with that jacket in hand. the embarcadero looks really nice looking outside there. some sunshine region its way down into the bay. we have seen some low lying cloud cover across the south bay as well as across the east bay and especially into the central valley that is starting to clear lift now becoming less and less of an issue. most of us, though, at least here in the bay area are sitting under some brighter skies 40's and 50's for our current temperatures. nice way to kick up the morning as long as you're prepared for it in a pretty nice afternoon as well. getting a look at some of our bridges things should start to calm down in the coming days as we do near the holidays
